Abstract

In this work we examine for the first time structures uncovered during excavations at the archaeological site, Los Pinos I, at Fuentes de Andalucía, Seville. Due to our archaeological intervention we were able to document information on one of the largest olive oil production complexes discovered to date in ancient Baetica. Two major construction phases are evident at the complex, one occurring in the first half of the first century AD, and the other dating from the fourth century AD. The production plant would remain operational until at least the sixth century AD, when we first see scaling down of activity at the site.
